
When you're deep in the newborn days, finding something simple and satisfying to snack on can feel like a small miracle. That’s exactly why we love these Flourless Chocolate Almond Butter Protein Cookies, a favorite from our lactation cookbook, Eat to Feed.
These cookies come together with just a handful of pantry ingredients, no flour needed, and they’re packed with protein from our Mama Power Protein Powder, healthy fats, and just enough sweetness to lift your spirits (especially during those middle-of-the-night feeds).
Almond butter provides nourishing fats and vitamin E. But mostly—they’re just really good. Soft, chewy, and incredibly satisfying. We like to keep a stash in the fridge for a quick grab-and-go bite between nursing sessions or naps.

Recipe:
1 large egg
1 cup coconut sugar
1 cup crunchy unsalted almond butter
1/4 cup Oat Mama Chocolate Mama Power Protein Powder
1 teaspoon baking soda
1/4 teaspoon fine-grain sea salt
1/2 teaspoon almond extract
1/2 teaspoon pure vanilla extract
1/4 cup mini dark chocolate chips
Directions:
- Preheat the oven to 350 degrees Fahrenheit. Line a rimmed cookie sheet with parchment paper.
- In a medium-sizd bowl, lightly beat the egg and coconut sugar. Mix in almond butter, vanilla and almond extract until smooth. Stir in protein powder, salt, and baking soda until combined. Mix in chocolate chips.
- Scoop 1 tablespoon sized balls onto a baking sheet and bake for 8-10 minutes.
