Coconut Caramel Dippers

These Coconut Caramel Apple Dippers are the perfect, nourishing way to ring in the new season. They are from Oat Mama Founder Eliza Larson's Cookbook Eat to Feed, and they do not disappoint. The full-fat coconut milk is bursting with healthy fats that nourish your breastmilk and keep you satiated, while the nutritional yeast contains B vitamins like B-12, playing a key role in your eye, bone, and skin health. Not only are they easy to make, they're using the most perfect seasonal fruit: big, crisp apples. Enjoy!

WHAT YOU'LL NEED:

1 (14-ounce) can full-fat coconut milk
½ cup coconut sugar
1 teaspoon nutritional yeast
⅛ teaspoon pure vanilla extract


TO SERVE:

3 or 4 large apples, cored and sliced
¼ cup crushed pistachios, peanuts, cashews (or nut of choice!)

HOW:

  1. In a small saucepan, combine the coconut milk and coconut sugar and bring to a boil over medium-high heat.
  2. Lower the heat to low and simmer at a soft boil for 30 to 35 minutes, stirring occasionally to break up any bits.
  3. When the mixture is thickened and glossy and can coat the back of a spoon, remove from the heat. Whisk in the nutritional yeast and vanilla and continue to whisk until the yeast flakes have dissolved.
  4. Serve warm, or let cool. The caramel sauce will thicken more as it cools. Sene with apple slices and crushed peanuts for dipping. Store the caramel in an airigns. container in the refrigerator for up to 2 weeks.
